RICOTTA FRUIT TOAST

Fancy schmancy toast.



Your weekend brunch can't get any cuter and easier than this. Yes, our mouths are watering too.

This upgrade from elementary pb and j is inspired by a toast I had at Sqirl in California. The original Ricotta toast has buttery thick, brioche bread that is slightly burnt while a heap of creamy ricotta and house-made jam sits on top. Thick sourdough provides structure for the luscious ricotta while fresh berries add a tartness that is mellowed out. It's kinda healthy, and totally delicious

What is ricotta? Ricotta is a fresh cheese with soft grain-like texture, and a slightly sweet flavor. Good ricotta can hold it's own shape, and is lusciously creamy. It’s one of my favorite cheeses due to its ability to take on sweeter profiles. It has 5x times more calcium than cottage cheese! 

KALE TIP  

︎ Any type of bread works as long as you butter/oil and toast it! I am a huge sourdough fan and use it interchangeably with brioche! 

︎ Make a spread with your friends! It’s much more fun with all hands on deck :) You’re only 5 mins away from brunch! 

INGREDIENTS

Yields 4 

16 oz ricotta
3 tbsp honey
Local fruit @goodapplefoods
Brioche bread @traderjoes
Optional:

Mint
Nuts
Jam
Honey
DIRECTIONS

1. In a bowl, whip together the ricotta and honey using a spoon! Once fluffy + smooth, cover and put in fridge.

2. Wash and slice your fruit! Have fun with it. Set aside. 
3. Toast brioche bread. Pan on medium low heat. Spray with oil, place brioche down, and spray top of brioche! Flip when golden. Toaster works just fine ;)

4. Spread luscious amount of ricotta onto toast.  Add fruit and serve with mint, nuts, honey etc.
